SIMPLE, DELICIOUS & HEALTHY VEGAN PANCAKE RECIPE

These fluffy Vegan Banana Oatmeal Pancakes are so easy to make and they are DELICIOUS. They're made with simple ingredients and take very little time to prepare, cook up and the best part of all... eat up!

Makes: 6 pancakes (medium sized)

 

Ingredients 

  • cup rolled oats
  • 1 cup almond milk
  • tablespoons maple syrup (watching your sugar intake? Try a sugar free maple syrup or a light version)
  • bananas
  • teaspoon vanilla
  • teaspoon baking powder
  • 1/4 teaspoon salt
  • olive oil, for cooking
  • maple syrup and your favorite toppings e.g., fresh fruits, natural peanut butter

Instructions

  1. Place all the ingredients in a blender: oats, almond milk, maple syrup, banana, vanilla, baking powder, salt. Blend until completely smooth.
  2. Brush oil in a large non-stick skillet or griddle over medium heat. Add batter and cook until you start to see little bubbles, about 2-3 minutes, flip the pancake and cook for another 2-3 minutes.
  3. Serve topped with maple syrup and fruits.
